  • 香蕉 1條
  • 檸檬汁 適量
  • 冧酒 5克
  • 雞蛋 160克 (約2隻)
  • 砂糖 120克
  • 低筋麵粉 120克
  • 咖啡粉 4克
  • 熱水 5克
  • 牛油(已溶) 30克
  • 朱古力 10克
  • 忌廉 300克

 

  • 450ml Water
  • 3 Mango
  • 4 tbsp Cream
  • 4 tbsp Coconut Milk
  • Some Pomelo
  • 3 tbsp Sago
  • 3 tbsp Water
  • 3 tbsp Sugar

烹調步驟

先將香蕉切粒,加入檸檬汁和冧酒拌勻後備用

Dice 2 mangoes and juice 1 mango. Peel and segment 1 pomelo

之後將雞蛋和砂糖打發備用

將低筋麵粉過篩

咖啡粉加入熱水溶解後倒入蛋漿中輕輕拌勻,再加入低筋麵粉拌勻

然後將小部分麵糊放入已溶的牛油拌勻後再倒回餘下的麵糊中拌勻

將麵糊倒入焗盤中再放進焗爐用180度焗10分鐘,出爐後反轉蛋糕待涼

隔熱水將朱古力溶解,溶解至一半時便可拿起然後慢慢攪拌至完全溶解

將已打發的忌廉分3次加入已溶的朱古力中拌勻,然後放上蛋糕面,用抆刀推平後平均地放上香蕉粒

之後再加少少朱古力忌廉抆平,便可慢慢將蛋糕捲起,放入雪櫃冷藏約1小時

冷藏後可用餘下的朱古力忌廉放上蛋糕上,用抆刀推平,然後用叉子在面上抹出條紋便成
