  • 1/4碗
  • 蒜片 3粒
  • 生粉 1湯匙
  • 紹酒 1湯匙
  • 白鱔 半條約1斤
  • 乾蔥頭 4粒
  • 紅辣椒 2隻
  • 3 slices Ginger
  • 4 slices Scallion
  • 1 tbsp Oil
  • 1 tbsp Salts
  • 1/4 bowl Water
  • 3 pcs Sliced Garlic
  • 1 tbsp Cornstarch
  • 1 tbsp Shaoxing Wine
  • Half Eel (About 1kg)
  • 4 pcs Shallot
  • 2 Red Pepper

醬汁

  • 2茶匙
  • 紹酒 1湯匙
  • 柱侯醬 2湯匙
  • 豆瓣醬 1湯匙
  • 2 tbsp Sugar
  • 1 tbsp Shaoxing Wine
  • 2 tbsp Chu Hou Sauce
  • 1 tbsp Chili Bean Sauce

烹調步驟

白鱔半條,買時要去潺及斬件,回家再用鹽擦淨,用溫水沖洗後下少許生粉撈勻

When you buy the eel, remind the shop to scrape the skin as it slimy and then cut it into chunks. To prepare the eel for cooking, first rub the eel with salt, rinse with warm water then mix with cornstarch

把干蔥頭,一開二的蒜片和薑片爆香

Sauté the shallot, sliced garlic and ginger slices

在煲內加入鱔段,中火煮至鱔肉變白色後加入醬汁爆香

Add the eels then cook with medium heat until the eel turns white, then add the sauce

加水1/4碗,水滾後加入蔥度,紅椒粒

Add 1/4 bowl of water.when the water is boiled, add scallions and diced red pepper

贊酒(加入1湯匙紹酒)

Add 1 tablespoon of Shaoxing wine
