  • 淡忌廉 350克
  • 砂糖 20克
  • 抹茶粉 5克

裝飾用

  • 白朱古力 200克
  • 抹茶粉 適量
  • 450ml Water
  • 3 Mango
  • 4 tbsp Cream
  • 4 tbsp Coconut Milk
  • Some Pomelo
  • 3 tbsp Sago
  • 3 tbsp Water
  • 3 tbsp Sugar

烹調步驟

先把紅豆蒸約1小時

Dice 2 mangoes and juice 1 mango. Peel and segment 1 pomelo

將低筋麵粉和抹茶粉過篩後備用

Add sago into boiling water. Cook for 6 minutes. Turn off the heat and set aside for 15 minutes. Rinse sago with cold water and drain

之後將蛋黃和砂糖混合,再加入水和油拌勻,拌勻後便可倒入已過篩的低筋麵粉和抹茶粉攪拌成蛋漿

把蛋白打發,將砂糖分3次加入蛋白中一同打發至企身後放入醋打至混合便可

將已打發的蛋白分3次放入蛋漿中,輕輕拌勻後便可倒入焗盤中,放進焗爐以180度焗10分鐘,出爐後反轉蛋糕待涼

將淡忌廉、砂糖和抹茶粉打發至企身後冷藏備用

切去蛋糕表皮後分成3片,每片約1吋厚

蒸熟後的紅豆加入適量砂糖,拌勻後冷藏備用

將紅豆加入抹茶忌廉中拌勻(預留一些抹茶忌廉用於蛋糕面),然後放上蛋糕面,用抆刀推平,蓋上蛋糕片,重複塗上抹茶忌廉,蓋上蛋糕片,之後用抹茶忌廉將4邊塗滿後冷藏一會兒

之後可用有坑紋的膠刮在蛋糕的面上抹出條紋,再灑上抹茶粉

隔熱水將白朱力溶解,之後倒入牛油紙上用抆刀推平,乾卻後便可弄碎或用圓形模裁出圓形形狀用作蛋糕裝飾便成
