  • 老抽 少許
  • 八角 4粒
  • 豬肋排 2條
  • 月桂葉 2片
  • 白胡椒 1兩
  • 乾莞茜 少許
  • Pinch Salt
  • Pinch Sugar
  • Pinch Chicken Powder
  • Pinch Dark Soy Sauce
  • 4 pcs Star Anise
  • 2 racks Baby Back Pork Ribs
  • 2 bay Leaves
  • 1 White Pepper
  • Pinch Dried Coridander

BBQ汁

  • 2安士
  • 茄汁 6安士
  • OK汁 1安士
  • 雞粉 少許
  • 黑椒 少許
  • 鮮檸檬汁 半個
  • 2oz Sugar
  • 6oz Ketchup
  • 1oz OK Sauce
  • Pinch Chicken Powder
  • Pinch Black Pepper
  • 1/2 Fresh Lemon Juice

烹調步驟

先把豬肋排洗淨 出水 再用刀在每節中間開1刀(留意不要切斷)

Rinse the ribs, put them in a pot of water, bring to boil and wash the ribs. Run a small sharp knife between the membrane and each rib. (Do not chop to pieces)

再煲水 把香料及白胡椒加入中火煲至出味

Add bay leaves, star anise and white pepper into water and bring to boil

其後再調味及加入適量老抽調色

Season to taste with some salt, sugar and chicken powder. Add some dark soy sauce for coloring

加入豬肋排 中慢火煲約40分鐘

Put the ribs in, use low to median heat to cook for 40 minutes

其後起出再在面上搽上BBQ汁

Take out the ribs and brush the BBQ sauce

用220度燒 10-12分鐘 (面上有色即成)

Pre-heat oven to 220oC, put the ribs in the oven and bake for 10-12 mins (until turns to brown)

最後在面上加入乾莞茜

Finally, sprinkle with some dried coriander
