薯仔牛柳粒

材料
- 牛柳 半磅
- 薯仔 半斤
- 洋蔥 半個
- 青椒 半個
- 生油 8湯匙
- 水 半碗
- 鹽 半茶匙
- 蜜糖 1湯匙
- 230g Beef Fillet
- 300g Potato
- 1/2 Onion
- 1/2 Green Pepper
- 8 tbsp Oil
- 1/2 bowl Water
- 1/2 tsp Salt
- 1 tbsp Honey
醃料
- 生粉 1.5茶匙
- 鹽 半茶匙
- 糖 半茶匙
- 水 1湯匙
- 生油 1湯匙
- 1½ tsp Cornstarch
- 1/2 tsp Salt
- 1/2 tsp Sugar
- 1 tbsp Water
- 1 tbsp Oil
烹調步驟

先把牛柳切粒,再加生粉、糖、鹽、水和生油撈勻,醃半小時
First dice the beef fillet, then mix with cornstarch, sugar, salt, water and oil, and marinate for half an hour

將薯仔去皮切粒,切成跟牛柳一樣大小,洋蔥切小片,青椒切角
Peel the potato and cut into the same size as the diced beef. Cut the onion into small pieces and cut the green pepper (angel cut)

在鍋中下油約8湯匙,煑至120度左右,放下,牛柳,快炒至轉色約5成熟取出
Put about 8 tablespoons oil in the wok, heat the oil until about 120oC, then stir fry the diced beef to medium then take it out

再將油煮至150度,放下薯仔粒,炒至薯仔收縮,將多餘的油倒出
Heat the oil to 150oC, stir fry the the potato until the potato shrinks, then pour out the excess oil

放下半碗水,加入半茶匙鹽,大火收乾一半水
Put a bowl of water to the wok with a half of teaspoon salt, turn to high heat to simmer half of the water

加入蜜糖,洋蔥片,中慢火煮至起黏,加入青椒角,牛柳粒炒勻,約煮1分鐘便成。注意下蜜糖後不要將汁煮至太黏,否則下牛柳粒後很易轉深色
Add honey, onion slices, simmer with low heat, add green pepper and beef, and then stir-fry for 1 minute. Do not cook the honey too sticky, or the color of beef will turn dark easily
