材料

  • 節瓜 200克
  • 粉絲 80克
  • 蝦米 40克
  • 蒜頭 4粒
  • 2湯匙
  • 200g Hairy Gourd
  • 80g Vermicelli
  • 40g Dried Shrimp
  • 4 Garlic
  • 2 tbsp Oil

糖水

  • 1茶匙
  • 蒜蓉 1茶匙
  • 紹興酒 1湯匙
  • 清水 400毫升
  • 砂糖 2茶匙
  • 半茶匙
  • 魚露 1茶匙
  • 麻油 1湯匙
  • 蝦米水 400毫升
  • 1 tsp Oil
  • 1 tsp Garlic
  • 1 tbsp Shaoxing Wine
  • 400ml Water
  • 2 tsp Sugar
  • 1/2 tsp Salt
  • 1 tsp Fish Sauce
  • 1 tbsp Sesame Oil
  • 400ml Dried Shrimp Water

烹調步驟

把節瓜去皮後切絲

將蝦米清洗後用凍水浸15分鐘,然後隔水取岀,隔出來的蝦米水留起備用

Wash the dried shrimps and immerse them in fronen water for 15 minutes, then take out from the water and leave the separated shrimp water for spare

之後處理粉絲,先用凍水浸15分鐘,隔去水份

接著起鑊,先落油,然後放蒜蓉炒香,再放紹興酒、清水、1茶匙砂糖,滾起後倒入粉絲中浸15分鐘,15分鐘後將粉絲隔去水份備用

之後再起爐,先將蝦米爆香,然後取出備用

取出蝦米後落油,先放蒜頭爆香,再放節瓜炒至軟身,然後放蝦米,再放調味料,最後放粉絲,炒勻後便可上碟
