  • 豆卜 4兩
  • 鯇魚腩 10兩
  • 薑片 4片
  • 2瓣
  • 6段
  • 麵豉 3湯匙
  • 3茶匙
  • 紹酒 2湯匙
  • 半茶匙
  • 500毫升
  • 生粉 少許
  • 1湯匙
  • 150g Fried Tofu Puffs
  • 375g Grass Carp Fish Belly
  • 4 slices Ginger
  • 2 cloves Garlic
  • 6 pcs Short Green Onions
  • 3 tbp Miso Paste
  • 3 tsp Sugar
  • 2 tbsp Shaoxing Wine
  • 1/2 tsp Salt
  • 500ml Water
  • Some Corn Starch
  • 1 tbsp Oil

烹調步驟

將麵䜴,糖和紹酒開勻

Make the sauce by mixing the miso paste, sugar and Shaoxing wine

把豆卜對角切成三角形

Cut the fried tofu puffs into triangular shape

鯇魚腩順骨紋切6件,加鹽撈勻

Cut the Grass Carp fish belly into 6 pieces, add salt and mix well

把鍋燒熱後加入1湯匙油,將魚腩煎至收縮後取出備用

Add 1 tbsp of oil to the pan and fry the fish belly until it is shrunk

加少許油,爆香蒜蓉,薑片再加入醬汁和水,拌勻

放入魚腩和豆卜,蓋上鍋蓋,用中火炆5分鐘

開蓋後放入蔥段

加入適量生粉水,拌勻,完成
