  • 雞翼 2400克(每款醬汁600克)
  • 1湯匙

醃料

A. 蒜蓉汁

  • 乾蔥 2粒
  • 蒜蓉 2粒
  • 砂糖 4茶匙
  • 1茶匙
  • 喼汁 1湯匙
  • 茄汁 1湯匙
  • 生抽 1湯匙
  • 紹酒 1湯匙
  • 雞蛋 半隻
  • 4湯匙

B. 魚香黑醋汁

  • 鎮江醋 4湯匙
  • 紹酒 4湯匙
  • 生抽 2湯匙
  • 豆瓣醬 2½茶匙
  • 砂糖 4湯匙
  • 1/2茶匙
  • 生粉 1½茶匙
  • 6湯匙
  • 薑蓉 2湯匙
  • 蒜蓉 2湯匙
  • 4湯匙

C. 芥末蜜糖汁

  • 芥末醬 2湯匙
  • 白醋 1½湯匙
  • 蜜糖 2湯匙

D. 甜酸汁

  • 白醋 4湯匙
  • 4湯匙
  • 砂糖 4湯匙
  • 1/2茶匙
  • 茄汁 1湯匙
  • 2400g Chicken Wings(600g for each flavour)
  • 2 tbsp Salt

A. Garlic Sauce

  • 2 cloves Shallot
  • 2 cloves Garlic
  • 4 tsp Sugar
  • 1 tsp Salt
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Ketchup
  • 1 tbsp Soy sauce
  • 1 tbsp Shaoxing wine
  • 1/2 pc Egg
  • 4 tbsp Water

B. Vinegar Sauce

  • 4 tbsp Zhenjiang vinegar
  • 4 tbsp Shaoxing wine
  • 2 tbsp Soy sauce
  • 2½ tsp Chili bean sauce
  • 4 tbsp Sugar
  • 1/2 tsp Salt
  • 1½ tsp Corn flour
  • 6 tbsp Water
  • 2 tbsp Minced ginger
  • 2 tbsp Minced garlic

C. Honey Mustard Sauce

  • 2 tbsp Mustard
  • 1½ tbsp White vinegar
  • 2 tbsp Honey

D. Sweet and Sour Sauce

  • 4 tbsp White vinegar
  • 4 tbsp Water
  • 4 tbsp Sugar
  • 1/2 tsp Salt
  • 1 tbsp Ketchup

烹調步驟

先將雞翼放於水中加入1湯匙鹽解凍約1小時

Put the chicken wings in a bowl of water, add 1 tbsp salt in the water to thaw for about 1 hour

取出雞翼後洗乾淨然後印乾

Take out the chicken wings, wash them and dry by kitchen paper

之後在雞翼內裏2支骨中間界1刀,會較容易入味

Cut a line in the middle of chicken wings for easier marinating

A. 蒜蓉汁 : 將雞翼放入大碗中,然後加入乾蔥、蒜蓉、砂糖、鹽、喼汁、茄汁、生抽、紹酒後拌勻,再加入雞蛋及水再拌

A. Garlic Sauce : The chicken wings into a large bowl, then put in minced shallot, minced garlic, sugar, salt, Worcestershire sauce, ketchup, soy sauce and shaoxing wine. Mix well. Add in eggs and water, mix again

B. 魚香黑醋汁 : 雞翼放入大碗中,然後加入鎮江醋、紹酒、生抽、豆瓣醬、砂糖、鹽、生粉、水、薑蓉、蒜蓉拌勻

B. Vinegar Sauce : The chicken wings into a large bowl, then add zhenjiang vinegar, shaoxing wine, soy sauce, chilli bean sauce, sugar, salt, corn flour, water, minced ginger and minced garlic. Mix well

C. 芥末蜜糖汁 : 將雞翼放入大碗中,先加入白醋、芥末醬拌勻,再加入蜜糖拌勻

C. Honey Mustard Sauce : The chicken wings into a large bowl, add white vinegar and mustard, mix well. Then add honey and mix again

D. 甜酸汁 : 將雞翼放入大碗中,然後加入白醋、水、砂糖、鹽、茄汁拌勻

D. Sweet and Sour Sauce : The chicken wings into a large bowl, add white vinegar, water, sugar, salt and ketchup. Mix well

雞翼拌勻後醃4小時或以上

Mix well and then marinate for 4 hours or above

之後在烘盆上塗上油,放入雞翼,將焗爐調至180℃焗10分鐘,之後拿出來將雞翼翻轉再焗5分鐘便成

Gently grease a thin layer of oil onto a baking tray, put the chicken wings and bake for 10 mins at 180℃. Flip the chicken wings to another side, bake for 5 more minutes. Done
